High Water's line of sour beer, called the Calambic™ Series, starts with a beer base that essentially is a golden ale aged in wine barrels for one to two years, with fresh fruits added for a tart flavor during the last four to six months of aging.

Visit the RRBC brewpub for beers on tap (including the sours) and a full menu that goes beyond ordinary bar bites. Other sours are: the aptly named Temptation, a sour blonde ale aged in Chardonnay barrels Beatification, a beer inspired by Belgium's Lambic region and Consecration, a chocolaty-spice and fruity dark ale aged in Cabernet Sauvignon barrels. One longtime success, and still at the top of its class, is Supplication, a sour brown ale aged in Pinot Noir barrels for 12 months with sour cherries along with its brewing microorganisms. Among the full line-up of ales and lagers that include California and Belgian styles ales, RRBC brews several wild ales, barrel aged beers in wine barrels acquired from local Sonoma County wineries. Vinnie was the brewmaster at RRBC then, and when Korbel left the beer end of the business in 2003, Vinnie and Natalie took over the brand name.
